2 cups sugar
1 cup canola oil
2 tsp coconut extract
3 cups flour
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
1 cup buttermilk
1 1/2 to 2 cups flaked coconut
Preheat oven to 350 degrees. Grease two large (or four mini) loaf pans. In a large mixing bowl, combine eggs, sugar, oil and coconut extract and beat well. Sift together flour, salt, baking powder and baking soda and add to egg mixture. Mix well. Add buttermilk and coconut and stir until thoroughly combined.
Pour into loaf pans and bake 40 to 45 minutes or until a cake tester inserted in the center comes out clean.
Let cool. Wrap tightly in saran wrap or foil and refrigerate overnight.
