This legendary Inn is rich in history dating back to 1917 and now owned by the Smith family. Lois Smith’s pie recipes are as majestic as the view you have when you eat them. Grab a cup of coffee and a slice of my favorite pie – the Chocolate Pie.
Oh this pie. It is magical. It’s light and creamy. The chocolate almost like a hot fudge flavor, yet not dense like fudge – Lois says it’s because the the high quality chocolate they use. I say it’s because Lois is a fantastic pie maker and I love her. The pie wouldn’t be complete without an amazing crust, almost savory, which adds a nice balance to the sweetness of the chocolate.
I love that Lois has created a diabetic option too, the sugar-free won’t feel alone. She’s created a diabetic Blueberry Pie with the addition of Splenda as the sweetener, you’d honestly never know the difference. And I’ve got the nose of a hound when it comes to sniffing out the real thing.
I’m ready to grab my keys and take the two hour drive, from Denver, to the Baldpate Inn for another slice right now. Seriously.
