Baldpate Inn Banana Butterscotch Muffins {Recipe}

The Baldpate Inn is a comfy little Inn that sits just a (literal) stone’s throw from Rocky Mountain National Park in Estes Park, Co.  This mountainside spot is rich in history and full of hand baked goodies – known for their pies and baked breads, I’ll have more on the pies later…oh the dreamy pies….

They were “sweet” enough to share with us their recipe for delicious Banana Butterscotch Muffins.  In my book, the bananas make them healthy and the butterscotch makes them dessert.  A combination I had never had before, until that pleasant day, a combination that I’ll not soon forget.

Baldpate Inn Banana Butterscotch Muffins

1 Cup Oatmeal, uncooked quick variety

1/2 cup white sugar

2 bananas

1 C white all-purpose flour

1 tsp Baking powder

1/2 tsp Baking soda

1/2 tsp Salt

1/2 C Butterscotch mini chips

1 Egg

1/4 C milk

1/4 C Vegetable Oil

1 tsp Vanilla extract

In a food processor puree oatmeal and sugar until fine; place in mixing bowl with the rest of the dry ingredients.  Puree peeled bananas.  Add bananas with liquids to dry mix, stirring by hand just to blend.  To bake, fill greased muffin tins 2/3 full.  Bake in preheated oven at 400 degrees for 13-15 minutes, until top springs back when lightly touched.  this makes 1 dozen muffins.

They’ve got a cookbook out, which has a ton of their fabulous baked goods and soups listed.  YUMM.
