What’s better than dessert? How about 3 desserts in one! That’s where these neopolitan bars come into play. We all know neopolitan ice cream- that decadent treat of 3 flavors of ice cream in one container -growing up it was a staple in our house. Being one of 6 kids, it was perfect because we didn’t all agree on the same flavor, and going this route it made it a whole lot easier for dear ol’ mom to please us all. This recipe takes those same great flavors and puts them in a bar form. Brace yourself for this one, it’s succulent and sweet. Definitely grab a glass, or 5, of milk with these babies.

1 pouch double chocolate chunk cookie mix
- 1/2 cup butter, melted
- 3 eggs
- 2 packages (8 oz each) cream cheese, softened
- 1/2 cup sugar
1 teaspoon vanilla
1 container strawberry frosting
1. Heat oven to 350°F. Spray bottom and sides of 13×9-inch pan with cooking spray. In large bowl, stir cookie mix, melted butter and 1 egg until soft dough forms. Press dough in bottom of pan. Bake 10 minutes. Cool 5 minutes.
2. In large bowl, beat cream cheese, sugar, vanilla and the remaining 2 eggs with electric mixer until smooth. Spread over cookie layer.
3. Bake 30 to 35 minutes or until set. Cool 30 minutes (very important to let it cool). Spread frosting over cream cheese layer. Refrigerate 2 hours. Cut into 6 rows by 6 rows. Store covered in refrigerator and enjoy!
