It was a lazy Sunday indeed. I asked my husband what he would like for breakfast (warning him to keep his wishes simple). He said something caramel-y. We both laughed because caramel has a somewhat special meaning for us. You see, he bought me a caramel latte on our first date. So I needed a simple and quick recipe that would allow me to go back to bed as soon as possible. I opened my fav recipe app MyGreatRecipes, typed caramel desserts and bam! Banana bread. Caramel Banana Bread Addiction
That day was when my addiction to caramel banana bread started. The recipe I made was so delicious we ate the whole loaf by the evening. I don’t know how many versions of caramel banana loafs I have made so far. The kids love it too. Before you start judging me for feeding my kids unhealthy food, I will tell you that there are healthy versions of caramel loafs.
Whole Wheat Banana Bread
This is the healthy version I am talking about. Besides whole wheat it includes unsweetened applesauce which substitutes the eggs. You can also replace regular sugar with brown sugar (which will work great in this recipe), honey, stevia or molasses. The caramel twist comes from the caramel bits you can find in the stores.
Glazed Caramel Banana Bread
Any banana bread can be turned into a caramel heaven if you just top it with a caramel glaze. Prepare it with heavy cream, brown sugar and butter. Another way to make an easy caramel glaze is with soft caramel candies (about 25 of them) and heavy cream. This is from the Caramel Swirl Chocolate Chip Banana Bread. Try adding these caramel candies inside the batter as well. They are soft enough to melt during baking and will give your banana loaf an instant caramel flavor.
Caramelized Roasted Banana Bread
Roast your bananas before adding them to your batter together with butter and sugar. All you need to do is put this mixture in the oven for about 10 minutes. The bananas will get caramelized and make the batter sweet and rich.
Caramelized Banana Bread with Dulce le Leche
There is another way to caramelize bananas (this one is not as healthy as the above mentioned, though). Slice 2 bananas and add them to a melted butter in a hot pan. Add brown sugar and cook for about 10 minutes. When they use an electric mixer to make puree. Add them to the banana bread batter. This recipe includes home-made dulce le leche made with sweetened condensed milk which is placed in a glass pie dish and then covered with foil. The dish is then placed in a larger dish filled with hot water and baked at 425 degrees F for about one hour. Drizzle it warm over the cooled loaf.
Nutella Caramelized Banana Bread
I must confess that I have made my own completely decadent version of caramelized banana bread. I made some extra caramelized bananas and when the banana bread cooled I smeared the slices with Nutella cream and added the bananas on top. Unforgettable!
