I LOVE STRAWBERRY CAKE! Yes I do. I love Strawberries, How bout you?! I have it every year for my birthday! EVERY YEAR! Oh and it has to be PINK or RED! No white cake with strawberry frosting or filling, nope, no way! And my birthday is in July, so I’m thinking this year, I’ll be having Strawberry Cake Twice! Once for my birthday and again for the 4th of July. The Simply Delicious Amish Cooking Cookbook is sharing with us one of their yummiest RED cakes for the 4th and I’m thinking a few blueberries hidden in the cake layers would make this one a huge hit for any Independence Day Party! Three-Layer Strawberries and Cream Cake
2 cups sugar
1 small package strawberry gelatin
1 cup butter, softened
2¾ cups cake flour
2½ teaspoons baking powder
1 cup milk
1 teaspoon vanilla
½ cup puréed strawberries
1½ cups heavy whipping cream
2 tablespoons sugar
½ teaspoon vanilla
1½ cups sliced fresh strawberries
2 cups shortening
8 cups powdered sugar
½ cup milk
Preheat oven to 350?. Grease and flour three 9-inch round cake pans. In a large mixing bowl, beat sugar, gelatin, and butter until fluffy. Add eggs one at a time and beat well. Mix flour and baking powder, and beat alternately with milk into the sugar mixture. Fold in vanilla and strawberries. Divide equally into cake pans. Bake 25 minutes; cool 10 minutes in pans then remove from pans and cool completely. Filling: Beat whipping cream, sugar, and vanilla until stiff. Fill each layer with ? of the mixture and ¾ cup strawberries.
Frosting: Mix ingredients and beat on low speed until blended and very smooth. Spread frosting around the sides of the cake. Make a pretty piping of frosting along the edge of the top of the cake. Gently spread remaining whipped cream on cake top. Decorate top with strawberries.
