Am I cheating on the Strawberry? @TAGRestaurant

If y’all have been reading my posts often then you know my true love for Strawberry Shortcake! I mean — I die for a homemade shortcake! So delicious! Which is why I truly fell in love with Chef Noah French  of TAG Restaurant in Denver when I heard he has a recipe for a Summer Citrus Shortcake.

My heart belongs to the strawberries, but on the other hand, I do have a little rendezvous with the peach occasionally, and now — NOW! to find out that I may be converting all together to a Lemon?! How can this be, you may ask?! Oh, just try it….you’ll understand. Trust me 🙂

Citrus Shortcake Recipe

Summer Citrus Shortcake

 

Orange Chiffon cake with Lemon curd, whipped cream and fresh citrus

Orange Chiffon Cake

1/2 Cup + 1 Tbsp. All-Purpose  Flour

1/2 Cup Sugar

Pinch of Salt

1/4 Tsp. Baking Powder

1/3 Cup Vegetable Oil

Zest of 1 Orange

2 Egg Yolks

1/3 cup Water

1/4 tsp. Vanilla

2 Egg Whites

1 Tbsp. Sugar

Combine all dry ingredients and orange zest in bowl (except for last amount of sugar) and reserve.

Combine oil, water, eggs, and vanilla in a separate bowl and mix together.

Add wet ingredients to dry and mix thoroughly.

Start whipping the egg whites

Gradually add sugar in stages until whites are stiff.

Fold in a third of the egg whites into the other mixture. Fold in the rest.

Scoop in into a large sprayed muffin pan filling 3Ž4 the way up.

Bake at 350* for approx. 20 mins or until a toothpick comes out clean when inserted into the center of the cake.

Lemon Curd

3 eggs

3 egg yolks

1Ž2 cup Sugar

Fine zest of 3 lemons

3/4 cup lemon juice

4 Tbsp. butter

 

Combine all ingredients except for butter and Cook on a double boiler

When mixture has thickened and the foam had disappeared, take off the heat and start to add the butter piece by piece and whisk in.

Strain into a bowl. Cover with plastic wrap and chill.

 

Whipped Cream

1 cup heavy

5 Tbsp. sugar (or 4 Tbsp. for less sweetness)

2 tsp. vanilla extract

Whip till medium to stiff peak

 Assembly

Slice cake in half.

Spread a of spoonful of curd onto bootom half. Place orange segments ontop and a dollop or pipe whipped cream ontop.

Place some more orange segments on plate.
