Another Awesome Breakfast Recipe from May-Mei Lee and @DOONYA !!!

Earlier this week we brought you the sweet-yet-healthy Banana Breakfast Pudding  from DOONYA , to celebrate all their success whipping America into shape. Turns out, they’ve been SO successful that they can bring you another one! From May-Mei Lee, general manager of DOONYA –


brownieendThis recipe is for you chocolate lovers out there.  Brownies are typically made with loads of butter, sugar, and flour. In our version, we get rid of those ingredients and found a healthier alternative in black beans.


Black beans are a good source of fiber and protein, which mean they keep you feeling fuller for longer. You won’t be reaching for that bag of chips stashed in your drawer an hour later.  One batch will supply you with a quick breakfast for the entire work-week or for your family to share.


Black Bean Brownie Sundae Recipe

Serves 6-8

2 cups pre-soaked or canned black beans

3 large eggs

4 tbsps olive oil

1/4 cup cocoa powder

1/3 cup honey

1 tsp baking powder

1 tsp vanilla

1/4 cup semi-sweet chocolate chips

2 cups plain Greek yogurt

Pre-heat oven to 350 degrees F. Grease a 8X8 or 9X7 baking pan. Set aside. Rinse the black beans, getting rid of any juices. Toss every ingredient except for the chocolate chips and yogurt into a blender.

Blend until smooth. Fold in the chocolate chips. Then, pour into the pan.

Bake in the oven for 25-30 minutes, depending on how done you like your brownies.

When done baking, allow to cool completely. Cut a square and add a generous dollop of yogurt on top. To be fair, this won’t taste like the rich, buttery brownies we crave, but you won’t feel guilty about eating these.
