Banana Split Dessert for Two {Recipe}

There comes a time in every person’s life where you have a craving.  You just need a portion, or two.  Recipes for two saves you from “sleep walking” in the middle of the night to polish off the entire leftovers.  (Who me?  Never.)

I personally love recipes for two, and so does eMeals.com.  They’re sharing with us their recipe for Banana Split Dessert for two, it’s a unique twist on the classic banana split. 

Banana Split Dessert (serves 2)

Crust:

1/2 c graham cracker crumbs

1/4 c butter, melted

1/4 c chocolate syrup

Filling:

1/2 c sifted confectioners’ sugar

1/8 c Eggbeater’s®

1/4 tsp vanilla extract

1-2 bananas

5 oz can drained crushed pineapples

1/2 c dairy-whipped topping

2 tbs chopped walnuts

Directions:

Combine graham cracker crumbs and melted butter. Press mixture into bottom and ½-inch up sides of 2 (4-inch) spring-form pans. Drizzle chocolate sauce evenly over both graham cracker crusts. Refrigerate for 15 min.

In a bowl, combine sifted confectioners’ sugar with 1/4 c softened butter, Eggbeater’s® and vanilla extract. Beat about 5 minutes until fluffy. In both prepared pie crusts: Spread cream mixture over crust. Slice bananas and place a layer over creamy layer. Top with drained pineapple. Cover with whipped topping. Sprinkle with nuts. Cover and refrigerate at least 2 hours before serving.
