Bananas Foster Bread Pudding {Recipe}

The Southern Steak & Oyster provides us with this delightful Bananas Foster Bread Pudding recipe.  Two classics melded together to join a holy delicious union on your plate. Bananas Foster Bread Pudding

Bananas Foster Bread Pudding – Makes 12

10 Egg Yolks – save whites for Meringue

1 1/3 Cup Sugar

2 2/3 Cup Heavy Cream

2 loaves of Banbinos – ¼ inch slices

7 bananas, sliced

1/3 lb (1 stick plus 2 ½ tablespoons) butter, cubed

1 ½ cups Brown Sugar

1 ½ tablespoons Rum

1 1/3 Cup Egg Whites – reserved from earlier

1 1/3 Cup sugar

Combine first 4 ingredients in a baking dish, cover with foil and bake at 325 degrees for 40 minutes.

Combine ingredients 5-8 in a large saucepot and head until combined. Set aside and cool.

With about 10 minutes left on bread mixture, mix egg whites in mixing bowl until frothy, and then slowly add sugar. Whip meringue until soft peaks form.

Combine banana mixture with bread mixture, and then fold in meringue.

Prepare shallow baking dish by spreading butter and sugar on bottom and sides of pan. Add pudding mixture to pan, and bake uncovered at 350 degrees for 20 minutes. Rotate and bake for 20 more minutes.

Cut into rings and serve with drizzled chocolate sauce, rum sauce, and serve with fresh whipped cream.

Chocolate Sauce:

4 Cups Chocolate Chips

4 tsp Vanilla Extract

3 Cups Whipping Cream

Combine all ingredients and heat until combined.

Strain through mesh china cap.

Drizzle over dessert and refrigerate remainder.

Rum Sauce:

4 Cups Sugar

1 lb Butter

1 Cup Rum

4 Eggs

Combine first three ingredients and heat over medium heat until sugar is dissolved and mixture coats the back of a spoon.

Place in mixer and add eggs one at a time until combined.

Drizzle over dessert and refrigerate remainder.
