My dream of checking out a hotel kitchen and all that goes on behind the scenes was finally made a reality when I got to spend some one on one time with Executive Chef Erasmo Rodriguez of the Laguna Cliffs Marriott Resort and Spa in Dana Point, California.
Meeting with Chef Rodriguez was a treat. He was so warm and welcoming! So inviting and willing to show you his “home away from home.” Originally from Texas, Chef Rodriguez and I immediately hit it off. And when he said his dessert was big because everything in Texas is big, I knew I was at home!
I had the honor of tasting the Chef’s special Valentine’s Day dessert that is part of The Marriott’s Sweet Escape package that runs till the end of February. The dessert consists of donut holes with vanilla ice cream and crispy waffles with sea salt caramel ice cream all topped with pistachio crumbles, blueberries compote, chocolate shavings and mint oil. This dessert was magical! So delicious and full of flavor. When asked how he came up with the components for the dessert, his answer was plain and simple; his kids. They were the inspiration for a dessert full of fun ingredients and made with love!
On your next visit to California, you might want to consider a stay at the Laguna Cliffs Marriott Resort and Spa. If the Chef’s food is anything like his dessert, you will be in heaven!
