Cheesecake Pops! {Recipe}

CHEESECAKE POPS! Are you seriously? As if enjoying the silky smooth taste of cheesecake isn’t heaven on a fork already, let’s make it even easier to eat it and make it into a pop! Swissôtel Chicago is offering up their recipe for their FAMOUS Cheesecake Pops and all of us get to enjoy them right at home. {We’ve got some super sweet connections!}

Swissotel Chicago’s FAMOUS Cheesecake Pops

3 lbs Cream Cheese, Soft
12 oz Sugar
2.4 Teaspoons Butter, Soft
12.9 fl oz Eggs
6.25 fl oz Cream

Cream the first three together. Add the eggs, mix until combined. Add the cream, mix until combined. Bake crustless at 275 F in a water bath til set. Chill completely. Using a cookie scoop, scoop out round balls of cheesecake. Push a lollipop stick into each ball. Place in freezer til firm.. Meanwhile, melt chocolate glaze. Dip each cheesecake ball into the chocolate and then decorate with nuts, pretzels, mini chocolate chips or sprinkles. Refrigerate until service.
