Cherry Chocolate Brownie Bites

Back to my series on How to open up a can of WhoopA.. on Valentine’s Day….

I am about the easy.  Easy to make, easy to eat, but spectacular presentation.  With a little inspiration from the Santa Hat Brownie Bites, and for some reason my new-found obsession with maraschino cherries in tow (where have they been all my life?), and created something you’ll be noshing and your kiddos teachers, and those pesky room moms, will be bowing at your awesome Sugar Loco feet.

chocolate cherry brownie bitesYou can whip up this recipe one of three ways – 1) make them all from scratch, 2) do half store bought and half homemade, or 3) buy everything at the store, slap it together, and then put it on your own serving-ware and throw away all the evidence, claiming #1.  I show you how to do all three below.  I won’t tell or judge.  #Swearsiescherry chocolate brownie bites

Cherry Chocolate Brownie Bites

#1  Completely Homemade

1 pkg Hershey’s Milk Chocolate Hearts

Mrs Field’s Brownie Recipe

Brownies

6 oz semisweet chocolate, coarsly chopped

1 stick unsalted butter

2 cups all purpose flour

1 tsp baking soda

1/2 tsp salt

1 1/2 cups light brown sugar

4 large eggs

6 oz mini semisweet chocolate chips

Preheat oven to 350 degrees F.  Grease a mini-muffin pan, set aside

In a double broiler melt chocolate and butter over hot boiling water, or place in a microwave safe bowl checking and stirring every 10 seconds.  Set aside to cool to room temperature.

In a small bowl whisk together the flour, baking soda and salt.

In a medium bowl, beat the sugar and eggs together until thickened, about 5 minutes.  Beat in the melted chocolate mixture.  Fold in the flour mixture and the mini chocolate chips.  Pour the batter into prepared pan.  Bake for 15 minutes, or until a cake tester comes out clean.  Cool the brownies in the pan on a rack for 10  minutes

Cherry Butter Cream Recipe

Ingredients for Cherry Frosting:

  • 2 sticks butter (softened)
  • 1 jar maraschino cherries
  • 3 cups powdered sugar
  • red food coloring

Directions for Cherry Frosting

Combine butter and 4 tbsp cherry juice.  Beat on low, slowly adding powdered sugar. Beat on high for two minutes. Add red food coloring to make mixture more vibrant, if desired.  Scoop frosting into a pastry bag or plastic bag and clip the tip.

Remove Brownie Bites from baking pan, put on a plate. Pipe frosting around brownie bite, covering the entire top.  Refrigerate for at least 20 minutes to stiffen.

Add chocolate heart to the top.

Combine recipes 1 and 3 in which ever way you want to

#3 – Completely store bought “recipe”

1 pkg brownie bites – found in your bakery section

1 pkg Duncan Hines Cherry Vanilla Frosting Creations

1 container Duncan Hines Frosting Creations Frosting Starter

1 pkg Hershey’s Milk Chocolate Hearts

Heart cupcake wrappers

Mix frosting starter and flavor, out into a pastry bag or plastic bag with a cut corner, set aside.

Take brownie bites out of container (throw out evidence), put on a lovely serving dish in cupcake wrappers.

Pipe frosting around brownie bite, covering the entire top.  Refrigerate for at least 20 minutes to stiffen.

Add chocolate heart to the top.

    Will attempt #1 because I can NEVER make brownies and I want to concur this!! But I’m confused on how long to bake – 15 min or 10 min? Oh wait, I just looked again and I bet you meant to say ‘cool’ for 10 min. I have to be sure because I think the baking time is why I can never make brownies — can you say hard as a brick??? Thanks and I AM going to make these and succeed!!
