Churro Waffles {Recipe}

There are two reasons I wanted a waffle maker for Christmas this year. 1. So I could recreate my mom’s famous homemade waffles and 2. so I could try my hand at one of the most amazing recipes I had ever laid my little brown eyes on- CHURRO WAFFLES! Yes, you read that right, churro waffles. I’m not sure there has ever been a greater combination than churro meets waffle. Not familiar with churros? Let me give you a quick explanation of what they are. Churros are foot long “sticks” of fried dough, rolled in cinnamon and sugar and have a crisp, satisfying texture. A perfect light snack. My love for churros started when I had my first taste of one in Disney World at the Mexico pavilion  and instantly my palate liked what it was tasting . Unfortunately the travel distance to Disney World isn’t exactly a hop, skip, and a jump away, so I have to settle for a little less gourmet version, and head to Taco Johns for their churros when I get a craving . As for waffles, I have always had a soft spot for them. My mom makes the best waffles, and I could eat them for breakfast, lunch, dinner, snack, all day every day! In fact waffles for dinner were-and still are- one of my favorite meals! Whatever meal you make these for, they are sure to be a hit!

ChurroWaffles

Churro Waffles

Ingredients:
1 teaspoon salt
4 teaspoons baking powder
2 tablespoons white sugar
2 eggs
2 cups of all purpose flour
1 1/2 cups warm milk
1/3 cup butter, melted
1 teaspoon vanilla extract
3 Shakes of cinnamon

For the churro topping:
1 cup of white sugar
1/4 cup cinnamon
1/2 cup of melted butter

Directions:

1. In a large bowl, mix together flour, salt, baking powder and sugar; set aside. Also at this time you can combine your churro topping and set it aside. Preheat waffle iron

2.In a separate bowl, beat the eggs. Stir in the milk, butter and vanilla. Pour the milk mixture into the flour mixture; Next fold in three shakes of cinnamon beat until blended

3. At this time you can also melt your 1/2 cup of butter used to pour over waffles. Next generously spray your waffle iron with no stick cooking spray. Than ladle the batter into a preheated waffle iron. Cook the waffles until golden and crisp. Once fully cooked immediately pour melted butter on each side of the waffle and than dip each buttered side into your cinnamon/sugar churro mixture.

4. Serve immediately and enjoy!
You can drizzle the waffles with a little extra syrup at the end for an extra kick of sweetness, if your sweet tooth desires so!
