Cookie Pies At Home {Recipe}

You may or may not remember my review on Barbara’s Cookies Pies [HERE], but now Barbara’s dishin up the secrets {well, just a few of them} for all you sweet readers out there! She is sharing her recipe for some yummy delicious Cookie Pies that you can bake right at home. I cannot wait to whip up a batch with my baby girl this week – Yum!

Cookie Pie Recipe

Barbara’s Cookie Pies

This is a very rich one and has a nice consistency for slicing. It makes enough fillings for about three 7-inch Cookie Pies.

Ingredients

2 eggs

1/2 cup flour

1/2 cup sugar

1/2 cup packed brown sugar

1/2 cup packed brown sugar

3/4 cup softened butter (1 1/2 sticks)

1 cup chocolate semi-sweet chocolate morsels

1 cup pecans or walnuts

1 tsp vanilla

3 par baked pie shells

Pre-heat oven to 350F

Instructions:

Beat Eggs until frothy. Add sugar & vanilla. Melt butter and add to sugar & egg mixture. Stir in flour until blended. Stir in nuts and chocolate morsels.

Spoon in par-baked Cookie Pie Crust. Bake about 25-30 minutes until center is set. Cover with foil if top begins to get too dark. Don’t over-bake and don’t overfill as this recipe puffs up.

Great served warm with ice cream or whipped cream.

If there is any remaining filling, make Chocolate Chip cookies or refrigerate.
