Cookie Stuffed Cookies N Cream Cupcakes {Recipe}

After this post for Stuffed Cookie Cups went viral, I began thinking of all of the amazing things I could stuff a cookie into.  So many places so little time, some flops, some winners.  This one is a winner.  It’s super easy to do and you’ll be impressing everyone around you with them.  When they bite into their dreamy Cookies N Cream cupcake, inside will be a crisp little surprise waiting, who doesn’t love a surprise in their cupcake?  In this recipe I didn’t use the traditional Shmoreos – I used Newman’s Own and now I’m all feel-goody because they donate proceeds to the cookie-less.  Everyone should have cookies.

Cookie Stuffed Cookies N Cream Cupcakes

Cupcake Ingredients

Yellow Cake Mix – I used this

Ingredients for Yellow Cake Mix – typically oil, eggs, and water

12 Chocolate N Cream Cookies or more, you may be able to squeeze out 18 from this recipe

Cupcake Liners – we like Duff’s cupcake liners from Gartner Studios – see the cupcake in the background using them.

Frosting Ingredients

1 cup butter, softened {I use salted butter}
3 1/2 cups confectioners’ sugar
1 teaspoon milk
1 teaspoon vanilla extract
1/8 teaspoon salt

10 Chocolate & Cream Cookies – Newman’s Own or Oreos

Cupcakes – Preheat your oven to box specifications.   Line a muffin pan with cupcake liners, drop a cookie into the bottom of each liner.  Set aside.

Create your cake batter per the box instructions.  Scoop 1/3 cup of batter into each cupcake liner, over the cookie.  Throw in the oven for the time specified on the box.  Watch them closely, make sure to pull them out when they start to brown on top, and are losing their shine.  Cool for 5 minutes in the pan, cool for an additional 20 on a wire rack.

Frosting – Combine butter, sugar and salt in a stand mixer fitted with the paddle attachment, beat until fluffy.  Add vanilla extract and milk and whip until smoother.  Add in whole cookies, a few at a time, until they’re crunched up into smaller bits or crumbs.  Spread over cupcakes.  Eat.
