I feel like we’ve been hearing about the end of Summer for a while now, but it isn’t over yet! Maybe it’s that we don’t have kids, aren’t in school ourselves, and live in the perennial summer climate of Southern California, but we think there’s still plenty of time to head outside and enjoy the sun before the windbreakers and rain boots of the Fall.
With that in mind, check out the Cucumber Cooler, a new recipe sent to us by Ketel One Vodka. We’ve been ALL ABOUT ginger beer ever since rediscovering Moscow Mules this year, so it’s nice to see it featured in another drink for some variety. The ginger bite can be a little strong in a Mule, which is why the cucumber is a great balance here. It gives your drink a crisp taste and texture and slightly mutes the ginger flavor without getting rid of it entirely. The cocktail as a whole is PERFECT for cooling off in the Summer heat, or just for convincing yourself that it’s still summer! Here’s the recipe –
KETEL ONE CUCUMBER COOLER
1.5 oz. Ketel One Citroen
3 slices cucumber (seedless)
.5 oz. fresh lime juice
Combine first three ingredients in a mixing glass. Shake vigorously with ice and strain into a Collins glass filled with ice. Top with ginger beer. Garnish with a cucumber slice.
