There is nothing like a good chocolate chip cookie, and sometimes all you want is the ease of popping some in the oven and baking a delicious batch in minutes. Well, now you can! Introducing Paleoful, a line of easy baking mixes that are vegan and paleo friendly.
Today, I tried the chocolate chip cookie mix made with almond flour, and I’ve shared my journey with you below. Let me tell you, they definitely smell great out of the oven, and for a cookie from a mix, these chocolate chip cookies are solid!
CHOCOLATE CHIP COOKIES
Ingredients
- 1 package cookie mix
- 2 tablespoons of milk (any dairy/non-dairy milk)
- 1/4 cup of light tasting oil (melted coconut oil preferred, or grapeseed/light olive oil)
- 1 teaspoon vanilla extract (optional… but I think necessary)
Method
Preheat oven to 350ºF. Line a cookie sheet with parchment paper or a silpat.
Combine baking mix, oil, milk, and vanilla, and stir it together until a dough is formed.
Take 1.5-2 tablespoons of dough and flatten in hand to make a flat disc and place onto cookie sheet. Mix should make approximately 12 chocolate chip cookies. (For me, they made 8)
Place cookies in preheated oven and bake until golden brown for approximately 13-16 minutes. Oven temperatures may vary, so cooking time is appropriate.
When cookies are done baking, remove them from the oven and let them cool on the cookie sheet for 10 minutes before enjoying.
