Frozen Smores Bars {Recipe}

June is here which can only mean one thing- the kickoff of “s’mores season“! That’s right, sweet summertime is just beginning, the nights get longer, the lingering scent of bonfires fills the air and s’mores are being made all around the country. An American treat, a favorite of kids and adults alike.  I’m known to make stove top s’mores year round, but I’m always on the lookout for new recipes that incorporate the toothsome treats in new and innovative ways.  I stumbled upon the recipe for frozen smores bars and immediately my mouth hit the floor- I knew I was going to whip some up that night! The original recipe incorporates all homemade ingredients, right down to the graham crackers. I’m all about homemade, but I’m a 24 year old working full-time- ain’t nobody got time for that! So I adjusted the recipe slightly and was beyond thrilled with how they turned out… I think I shoveled in 3 that night!

Frozen Smores Bars
adapted from  Sweetened With Honey

Ingredients:

1 package cinnamon graham crackers

1 package semisweet chocolate chips

4 ounces cream cheese, softened

1 tablespoon vanilla extract

¾ cups marshmallow fluff

1 ¾ cups powdered sugar

1-2 teaspoons milk, if needed

 

Instructions 

 To make the marshmallow filling, beat cream cheese in the bowl of electric mixer until creamy. Add in fluff and beat for 2-3 minutes, then add in vanilla extract. With the mixer on low speed, add in powdered sugar 1 cup at a time until fully incorporated. Once all the sugar has been added, beat on medium-high speed for 2-3 minutes. If mixture if too runny, add a bit more sugar. If it’s too thick, add a bit of milk one teaspoon at a time.

Assembly

1. On a cookie sheet lined with parchment paper, place half of the graham crackers bottom side up. Spoon 2 heaping tablespoons of the marshmallow filling on the graham cracker. Top with the remaining graham cracker. Place in freezer for about 30 minutes to harden. 
 
2. Melt the chocolate chips in the microwave on high until just melted. Let cool a little bit. 
 
3. With the smores still in the freezer, take two or three out at a time and dip in chocolate. Immediately place back in freezer. Continue until all bars are dipped. Freeze until chocolate is hard. 
 
Keep in airtight container in the fridge for up to two weeks.
