Gigi’s Cupcakes {Denver} {Everywhere}

I became obsessed with Gigi’s when they showed off their cupcakes at A Taste of Colorado last summer.  I remember things so clearly.  I was on my way out, actually physically rolling out, stuffed with every sort of sweet I could get my lips around.  Just eaten a fried oreo, when low and behold I saw a shining light.  Hands holding out Strawberry Shortcake cupcakes, Chocolate Cupcakes, and a few others.  My eyes met with the Strawberry Shortcake – and it was love at first bite.  I ate it in two bites, knowing full well I shouldn’t have because of all of the other food I stuffed down that day, but I had to.  And I’m so glad I did.Strawberry Shortcake Cupcake from Gigi's Cupcakes{pardon the flat sides, the box broke as I was walking into the house and they all smooshed together, didn’t stop me from eating them in 30 seconds flat}

Fast forward almost a full 9 months later and I still crave that little guy.  I still compare every cupcake to the one who was my summer love.  Until a few days ago when our eyes met again at the Aspen Grove location.  I wrapped my arms around it and we became one again (because I ate it all gone).  Why is it so special?  The mile high fresh strawberry buttercream, the white cake baked with more strawberries, the red sugar crystals on top, completing the package.  It all works together without being overwhelming and needy.  So good, I’ll be making a trip back weekly to become “one” with another cupcake.

Even though I am head over heels in love with the Strawberry, every other cupcake and cheesecake flavor I put in my mouth was insanely good too.  You can’t go wrong with any flavor at Gigi’s.
