Cookies For Grown Ups - Manadarin Orange with Chocolate Cookies

quench – Mandarin orange and dark chocolate

Pairing: Merlot



½ cup unsalted butter, softened

1 ½ cups sugar

1/4 cup light brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1/4 teaspoon ground ginger

1/2 teaspoon baking soda

1/4 teaspoon salt

12 sections of fresh mandarin orange, cut in half to yield 24 sections


For frosting

½  cup unsalted butter, softened

2 1/4 cups confectioners’ sugar, sifted

½  cup cocoa powder

1/4 teaspoon vanilla extract

1/4 cup milk

24 (¼ -inch) squares high-quality dark chocolate

In a large bowl, using an electric mixer, cream together butter and sugars until light and fluffy, about 3 minutes. Mix in egg and vanilla. Beat until well blended.

Whisk together flour, ginger, baking soda and salt in a small bowl and add to butter mixture. Beat until just incorporated. Refrigerate dough for 30 minutes.

Preheat oven to 325° F. Scoop or drop dough by 1 teaspoon portions and flatten each to an oval with . ¼ inch thickness. Drape an oval of dough over each orange section, and gently fold dough around the orange on three sides, leaving just a bit of orange visible. Place 1 ½  inches apart on a parchment-lined or nonstick baking sheet. Bake for 9-11 minutes or until bottoms are golden brown. Let sit for a few minutes and transfer to a cooling rack.

To make frosting: In a separate bowl, mix together butter, confectioners’ sugar, cocoa powder, vanilla and milk, and stir to a creamy frosting consistency, adding a touch more milk as needed. Frost the top of each cookie. Then place a square of chocolate on each.
