I’ve recently discovered my love for Mango’s. Ok wait – my obsession for Mango’s in beverages. At first it was just the Mango Lemonade, but then along came a little recipe that seemed right up my alley. The Mango Mimosa! Can you say YU-UMMM!
Whole Foods Market is sharing with us today their recipe for a delicious Mango Mimosa made with Prosecco – perfect for any mid day brunch!
Whole Foods Market: “This refreshing combination of mango purée and sparkling Prosecco is easy to throw together for a quick brunch or cocktail hour. For a variation, substitute pineapple chunks for the mango.”
- 1 small mango, diced (about 1 cup)
- 1 (750-ml) bottle chilled Prosecco
Place mango in a food processor and process until very smooth, stopping frequently to scrape down the sides of the bowl. Transfer the purée to a container. Spoon about 1 1/2 tablespoons of the purée into 6 glasses and carefully pour in Prosecco; the drinks will foam up. Allow foam to settle, then stir each drink once or twice to combine Prosecco and purée. Serve immediately.
