Mixed Berry Swirl Blondies Recipe!
Perfect cookie for kids and grownups. Blondies are delicious and when you add a swirl of mixed berry jam they are even better. Enjoy!!!
Mixed Berry Swirl Blondies
1 cup unbleached all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter
1 cup firmly packed brown sugar
1 large egg
1 teaspoon pure vanilla extract
3 tablespoons mixed berry jam
Preheat oven to 350 degrees. Line an 9 inch square baking pan with parchment paper making sure the paper is tucked into all corners and that there is at least 1 inch overhang around the top of the pan on all sides. In a large bowl combine flour, baking powder, salt and brown sugar. Melt butter and combine it with the egg and vanilla extract. Combine wet ingredients with the dry, mix everything until well combined.
Pour batter into the prepared baking pan. Add jam on the top and swirl it with a knife all over the top of the batter. Bake until they are just set in the center, about 25 to 30 minutes depending on your oven. Pull them out of the pan with parchment paper. Cool them slightly before cutting. Cut them into 9 squares. Serve worm or cold depending on your preferences. Serving size is one square.
