It’s National Chocolate Day – do you have a chocolate in your hand? Brownie? Truffle? Anything?
Well, it’s not to late to get your chocolate fix in to honor such an amazing day like National Chocolate Day and Patron is helping you do so with their Patron XO Cafe Dark Cocoa Cookie Truffles. Sounds pretty amazing right?
Patrón XO Cafe Dark Cocoa Cookie Truffles
Prep time: 20 minutes
Cooling time: 90 minutes
Makes: 14 to 16 truffles
12 (2 1/2-inch) Chocolate chip cookies* (store bought or homemade)
2 ounces Cream cheese, at room temperature
3 tablespoons Patrón XO Cafe Dark Cocoa
2 tablespoons Dark cocoa powder
1 cup (6 oz.) Semi-sweet or dark chocolate morsels or pieces
Line baking sheet with wax paper. Crumble cookies into food processor; process until mixture resembles coarse meal. Remove cookie crumbs from food processor. Measure and return 1 1/2 cups cookie crumbs to food processor. Add cream cheese, Patrón XO Cafe Dark Cocoa, and cocoa powder; process until mixture begins to hold together.
Roll or scoop mixture into 1-inch balls; place on prepared baking sheet. Refrigerate for 1 hour. Microwave morsels in small, uncovered, microwave-safe bowl on high (100%) power for 1 minute. Some morsels may remain their original shape; stir. If needed, microwave at additional 10 to 15 second intervals, stirring just until morsels are melted.
Dip balls completely into melted morsels with fork. Use side of bowl or shake gently to remove excess chocolate. Return to baking sheet; refrigerate for 30 minutes or until set. Store in tightly covered container in refrigerator.
*Crisp store bought or homemade cookies work best.
