Passionfruit Lychee Mojito {Recipe}

Loving Zengo right now because they’ve bribed us with the Passionfruit Lychee Mojito.  Not only because they’ve bribed us, but because we adore everything about the Richard Sandoval restaurant – they’re like a liquor getaway.  A booze cruise, but classier than that kool-aid-laden rum punch joke they serve you.  No friends, this is a classy cruise filled with tropical delights.  Like this one…

Passionfruit Lychee Mojito

Zengo’s Passionfruit Lychee Mojito:

1 ½ oz. Parrot Bay Passion fruit Rum
1 oz. Passion fuit Juice
½ oz. Sour Mix
1 oz. Lychee Puree (we puree the lychees with the juice they are packed in for the puree)
5 Mint Leaves
A Splash of Club Soda

Process: Muddle lychee and mint.  Add ice, Parrot Bay Rum, sour mix, passion fruit juice and club soda to the glass.  Shake and pour into cocktail glass. Garnish with a lime wedge.
