Peppermint Mousse {Recipe}

Peppermint is one of my favorite flavors this time of year – peppermint mocha lattes, candy canes, oh and my all-time fave peppermint ice cream .  It just feels like winter in my mouth.

So of course, we have to share at least one peppermint recipe with you this year.  At only 102 calories per serving, it’s a dessert that is the perfect ending/beginning (however you like to do it) to your dinner, whether you’re watching your sugar intake or not.

Registered Dietician and author of Quick & Healthy Recipes and Ideas, Brenda Ponichtera, is sharing this super-cool mousse recipe with all of us.

This light, refreshing dessert is a good ending to a meal. It can be decorated for the holidays with a miniature candy cane. Sugar-free peppermint candies and candy canes are available.

Peppermint Mousse

1 small box (1 ounce) sugar-free instant white chocolate or vanilla pudding
2 cups fat-free milk
1/2 teaspoon peppermint extract
3–4 drops red food coloring
2 cups fat-free whipped topping
5 crushed peppermint candies (optional), regular or sugar-free

In a medium bowl, mix pudding with milk, peppermint extract, and food coloring. Stir constantly with a wire whisk for 2 minutes. Refrigerate for 5 minutes.
Add whipped topping and mix well.
Spoon into five parfait glasses and serve as is or topped with crushed peppermint candies or a candy cane.
