Delysia Chocolatier, based in Austin, Texas, knows how to create the perfect chocolate bite. Six years ago, Nicole Patel made a batch of handmade chocolate truffles as last-minute holiday gifts. To the delight of friends and family, she continued to create chocolate treats as a way to relieve stress from her corporate engineering day job. By 2008, what started as a hobby, quickly turned into a second career! Fast forward to 2015, and Patel and Delysia have come to receive national acclaim, being named one of the Top Ten Chocolatiers in the United States, as selected by the International Chocolate Salon and Taste TV. Delysia Chocolatier was awarded six Gold Medals at the 2014 International Chocolate Salon Awards.
Today, Delysia has expanded its handcrafted confectionery line beyond its award-winning truffles, to include barks, molded chocolates and chocolate mixes in a wide assortment of familiar and exotic flavors. Patel creates her entire product line from sustainable and ethical sources, using only fair trade cocoa beans and production methods that are both ethical and environmentally conscious, making Delysia the first chocolatier in Texas (and one of the few in the United States) to do so. Delysia’s creations are featured desserts at the Food & Wine Classic in Aspen (for the second year in a row) and will also be featured at this year’s Atlanta Food & Wine Festival!
A recent expansion has launched a new element to the Delysia
experience — a state-of-the-art Chocolate Culinary Center
. More than two years in the making, the technologically advanced Delysia Chocolate Culinary Center is the first complex of its kind in Texas. Just this month, Delysia has partnered up with Tito’s Vodka
to unveil a special collaboration featuring cocktail-inspired truffles for Tito’s inaugural Meet the Maker
project which spotlights artisans with an emphasis on handmade unique treats. Nicole and Delysia have also collaborated with like-minded artisans including Austin’s Becker Vineyards and BBQ champions Franklin Barbecue and The Salt Lick to forge unforgettable, limited edition chocolate creations.
