I am always looking forward to the warmer months. Why? Well, it’s the perfect time of the year to enjoy ice cream and soft serve treats.
I immediately thought of ice cream. I stopped to think for a bit, thinking twice because I do not own an ice cream machine, but that did not stop me. Here is exactly what I did:
Strawberry Ice Cream from Scratch
1 pound fresh strawberries, cut and frozen
12 ounces Greek yogurt, frozen
¼ cup honey
½ cup vanilla almond milk
Using a food processor, combine all the above ingredients together until the mixture is smooth.
Pour ice cream into a baking dish covering it with plastic wrap. Freeze mixture for 30 – 45 min.
After time has elapsed, take baking dish out of freezer. Using a rubber spatula or wooden spoon, scrape top of ice cream in order to incorporate air into the mixture. Cover dish, placing it back into the freezer allowing it to freeze again.
Repeat process at least 3x’s to get a soft – serve consistency.
A few tips:
The size of the baking dish will determine the length of time ice cream will need to be mixed. For example, if you use a baking sheet – the ice cream should be ready after 2 turns. If using a deeper pan, then it will take longer.
Serve Strawberry Ice Cream on top of waffles, in a sugar cone, or just by the spoonful! Hope you enjoy this treat as much as I did!
