Summit at the Broadmoor is not a typical Broadmoor restaurant with dark wood panels, rich in history, filled with ghosts throwing beer bottles, what you expect of the hotel’s property. Nope, not this restaurant. It’s actually vastly different from what you come to expect, aside from service that is, that is gold star all the way of course. It’s trendy, modern, bright, natural, and quite frankly yummy in my tummy. I had the pleasure of enjoying dessert in Summit after the Wild West Gingerbread Village peek, and am dreaming of it ever since.
Summit’s modern qualities transfer over in the flavors of the menu too. American food turned all modern and grown up, but not confusing-crazy-over-the-top modern, that’s just weird. Modern that has your taste buds singing because you want to analyze every burst of flavor hitting your tongue. Take for instance the homemade Pistachio Ice Cream with a Port Wine Swirl. Green is totally for envy here, I’ve got it bad. The classic pistachio flavor is comforting, subtly nutty, and classic. The swirl of port wine totally takes this dessert up at least 4-5 notches by adding a sophistication and balance. I kept going back for more, and more, and more, until sadly my fun had to end at the bottom of the bowl.
