- 1 package thin chocolate cookies
- Strawberries for garnish
- 1 recipe Whipped Cream
- 1 recipe Chocolate Mousse
- For the whipped cream:
- 1 1/2 cups chilled heavy whipping cream
- 1/3 cup sugar
- For the chocolate mousse:
- 12 oz chopped semi-sweet chocolate
- 1 tsp vanilla extract
- pinch of salt
- 3 cups chilled heavy whipping cream
- 1/4 cup sugar
To make the chocolate mousse, combine chocolate, vanilla and salt in medium bowl. Bring 1 cup cream to boil in heavy small saucepan. Pour hot cream over chocolate and stir until smooth. Cool to room temperature, stirring occasionally.
Beat 2 cups cream and sugar in an electric mixer until it forms stiff peaks. Fold in chocolate mix.Refrigerate to set.
To make the whipped cream, whip cream and sugar in an electric mixer until stiff peaks form. Set aside.
Now you’re ready for the layered dessert! The easiest way to get a clean layer of whipped cream and mousse is to use pastry bags to fill your glass. Using the disposable variety will make clean up quick, or you can use a plastic baggie and cut the corner to pipe in the mousse.
Pipe a layer of mousse in the bottom, then place a layer of your thin chocolate cookie on top. Pipe in a layer of cream, then add another layer of chocolate cookies. Repeat until your glass is full, or you have enough in your glass for a serving size. Top with whipped cream, a chocolate cookie and a strawberry to serve.
