Yes, I’m “mad” for madeleines!

According to Wikipedia, madeleines are “very small sponge cakes with a distinctive shell-like shape acquired from being baked in pans with shell-shaped depressions“.

Don and Susie Morris (aka, Don-Sue-Mor) have been making this little cakes since 1976, and I was lucky enough to sample 4 of the 6 flavors they offer. I couldn’t imagine how such a tiny cake (delivered in the mail, no less) would have the moistness, flavor and texture I hope for, but these little gems delivered. They come individually wrapped and are simply charming on a plate, served with tea, iced coffee or a big glass of milk. I devoured all four varieties – traditional, dipped, lemon zest and chocolate – in about 2 minutes, and was thoroughly impressed. They were tender, buttery and had that perfect, lightly crisped edge.

If I had to choose a favorite, I’d vote for the lemon zest – it was especially flavorful, with a bright, clean citrus taste (yeah, those will be the ones I hide from my family….).

In short, I no longer feel guilty about not having a “madeleine” pan in my arsenal of kitchen equipment – I’m happy to let Donsuemor keep me in steady supply!
